Batch 93 (Pilot 10) – Stupid Little Sister

As I have sized up min pilot brews to half a keg or 10 liters, they’re not really pilots anymore but batches of the size I started out with. So I’ll go back to naming them accordingly.

This one is a clone of an early Evil Twin recipe. This is all about the late hop additions.

Style: 1D “West Coast Amber Ale/Red IPA”. 8 liters. OG 1,066/ FG (est.) 1,019, 40 IBU, 39 EBC, 6,1 % ABV.

2,43 kg 1,02 kg (80 %) Extra pale malt
0,20 kg (6,6 %) Munich
0,19 kg (6,3 %) Crystal 100
0,09 kg (3,1 %) Crystal 240
0,09 kg (3,1 %) Victory
0,03 kg (1 %) Chocolate

Mash in a bag with 14,5 liters of water at 67 degrees for 60 minutes. Collect 12,7 liters of wort with a pre-boil gravity of 1,047. Boil for 90 minutes and add

6,5 IBUs (6,5 g @ 8,1 % AA) of Cascade at 20 minutes
7,5 IBUs (6,5 g @ 10,3 % AA) of Centennial at 20 minutes
Protofloc and yeast nutrient at 15 minutes
6,3 IBUs (13 g @ 8,1 % AA) of Cascade at 10 minutes
8,9 IBUs (13 g @ 10,3 % AA) of Centennial at 10 mimutes
5,5 IBUs (13 g @ 8,1 % AA) of Cascade for 10 minute WP
6,4 IBUs (13 g @ 10,3 % AA) of Centennial for 10 minute WP

Chill to 19 degrees and pitch rehydrated Danstar ESB yeast. Ferment.
Dry hop with 20 g of Amarillo for 7 days.

Package and carbonate.
